You know us for cookies. Quarter-pound, gone-in-four-bites, order-by-Sunday-midnight cookies. That's not changing.
But here's the thing nobody tells you about running a bakery: once you really learn dough, you start dreaming about it. And Will has been quietly obsessing over sourdough — the slow kind, the naturally leavened kind, the kind where you can taste the patience in every slice.
So we're making it official. Billy Bakes now bakes sourdough. Boules and babka, baked fresh in Hudson, Massachusetts, available for local pickup and local delivery.

What we're baking
The Sourdough Boule — $10
This is the classic. A round, golden-crusted loaf with an open, airy crumb and that gentle tang that only comes from a real, slow ferment. The crust crackles when it comes out of the oven. The inside is the kind of bread that makes you reconsider what toast can be.
It's the loaf for your Saturday morning eggs, your Sunday soup, your Tuesday "I deserve a good sandwich" moment. One boule feeds a household for a few days — or one person with no self-control for about 24 hours. We don't judge.
The Sourdough Babka — $20
If the boule is the responsible choice, the babka is the fun one. A rich, swirled loaf with ribbons of chocolate running through soft sourdough dough. Slice it and you get that marbled cross-section that looks like it belongs in a bakery window — because it does.
Babka is the move for brunch hosting, holiday mornings, housewarming gifts, or "I need to bring something and I refuse to bring something boring." Buy one for now and one for later — future you will be grateful.
Why sourdough, why now
Honest answer: because Will couldn't stop making it. What started as a side project — a starter on the counter, then two, then a lot of very opinionated bake notes — turned into bread worth putting on the menu.
When people start offering you money for your hobby, it's time to put it on the menu.
The other honest answer: some things shouldn't be shipped. Our cookies travel beautifully — they're built for it. Bread is different. Bread wants to be eaten within a day or two of the oven, still carrying that just-baked energy. So we're keeping sourdough local: baked in Hudson, picked up in Hudson (or delivered nearby), eaten fresh. That's the whole philosophy.
How to order
This part is simple:
1. Order online at the links below — boules are $10, babka is $20.
2. Pick up in Hudson, MA (4 Richard Road), or arrange local delivery — just reach out and we'll work it out.
3. Eat it fresh. Seriously. Day one is the main event.
A few things to know:
- Sourdough is local-only. We don't ship bread — Massachusetts pickup and local delivery only. The cookies ship nationwide every Monday; the bread stays home.
- We bake to order. These aren't sitting on a shelf. When you order, we bake.
- Bread inventory is small-batch by design. If we're sold out for the week, we'll tell you when the next bake is — it won't be long.
The crumb shot, because we know why you're really here
Look, we could write a thousand words about fermentation. But bread people want to see the crumb — those irregular holes, the glossy interior, the crust you can hear. The photos on the product pages are the real loaves. That open crumb on the boule? That's what a slow, natural ferment does. That chocolate swirl in the babka? That's what happens when Will gets going and nobody stops him.

Do you deliver sourdough? Local delivery around Hudson and MetroWest can be arranged — just reach out when you order and we'll work it out. We don't ship bread; some things are meant to be eaten close to the oven.
How far ahead should I order? We bake to order in small batches, so ordering a day or two ahead is smart — especially for babka.
Can I get bread and cookies together? Absolutely. Order both online and pick them up together in Hudson. The cookies ship nationwide every Monday; the bread you carry home yourself, ideally still a little warm.
